Peanut butter, Quinoa and flax cookies

Today is a rainy day in South Florida so I decided to get the kids to help me make this new recipe I have wanted to try. I saw the recipe on the Eat Right Kids website. They were pretty delicious and packed with protein. If your child has a peanut allergy you can substitute sunbutter.

2 cups cooked quinoa
1/2 cup peanut butter
1/4 cup honey
1 cup rolled oats
1/4 cup ground flax ( I only had seeds)
1/4 tsp. salt
Chocolate chips and raisins (We divided the dough and mixed raisins in one batch and chocolate chips in the other)
Preheat oven to 350 degrees. Mix all ingredients. Bake for 18-20 minutes. Let rest for 5 minutes before serving.
