Salsa worth making and sharing with the kids!

Last night we had Science night at my son's school. The school decided to combine the amazing harvest party with Science night and it was a major success. The school won a grant from the American Heart Association and was given 10 raised beds, dirt, seeds and tools to harvest a learning garden. Yesterday the school harvested cabbage, tomatoes, peppers and jalapenos. It was amazing and the kids love to be apart of such a fun activity.
 
Along with the events that were already planned we wanted to highlight the garden by serving a recipe. We decided on Salsa. Chipotle generously donated chips and their recipe for salsa. It was amazing to see the kids try the salsa and love it! Here is Chipotles recipe for Salsa!
 
Chipotle's Tomato Salsa
6 vine ripened tomatoes (diced)
1/2 red onion (finely chopped)
1/3 cup fresh Cilantro (chopped)
2 jalapenos (finely chopped) seeds removed
1 Tablespoon fresh lime juice
Salt and pepper to taste
 
With a knife cut tomatoes into quarters and remove the seeds and pulp. Dice the tomatoes and add to a large mixing bowl.
Combine the remaining ingredients with the tomatoes.
Season the salsa with salt and pepper. Taste the salsa, adjusting the seasonings as necessary.
Allow the salsa to marinate for 30 minutes before serving to let the flavors combine. Serve and Enjoy!
