First Day Breakfast

Today was our son's first day of kindergarten. I wanted his day to be great and I wanted him to start off right with a full belly of a healthy breakfast. Last night I made a yogurt parfait full of low fat yogurt, blueberries and granola. I layered them in a parfait cup and made it look like an ice cream sundae. It was a hit! He loved it and gobbled it up.



I have also been a little worried about his lunch and not sure how he would do with eating away from home. So I filled his lunch box with a peanut butter and jelly sandwich, an apple, a milk box, a Clif's Organic twist (pressed fruit), a squeezable yogurt, a box of raisins and a bag of baked chips. I told him that whatever he did not eat to leave in his lunch box. This was so I would have an idea of what he liked and didn't like. He ate most everything leaving only the yogurt (which he said he couldn't open), box of raisins and bag of chips ( he did not like them).

Relieved to get through the first day! Now onto an exciting and healthy school year!

  1. I will do a do it yourself yogurt parfait for when we have company. Its quick and healthy. I cut up some fruit ahead of time and set out bowls full of yogurt, fruits, granola and everyone gets to build their own.
