Quinoa and Peanut Butter Cookies
2 cups cooked quinoa
1/2 cup peanut butter
1/4 cup honey
1 cup rolled oats
1/4 cup ground flax
1/2 tsp. salt
Chocolate chips or raisins
Preheat oven to 350 degrees. Mix all ingredients together. Add in desired amount of chocolate chips, nuts or raisins. Mix until blended. Roll into 1/2 inch balls. Lay uncooked balls on prepared cookie sheet. Bake for 18-22 minutes or until golden brown.
If there is a peanut allergy in your family try sun butter as a substitute.
