Patriotic snacks for kids: Red beets with white beans (hummus) and patriotic fruit toast

Summer always conjures up great memories of the 4th of July. Since it is just around the corner I thought these recipes were a great addition to our Kids in the Kitchen contest! 
Kick off the morning with these flags themed toasts decorated with strawberries and blueberries. Spread cream cheese on whole wheat toast. Top with sliced strawberries and blueberries. To add a little more protein fill in the spaces with peanut butter. 


For a great iron, fiber and B vitamin filled snack try the pinkalicious, and delicious red beet and white bean hummus. Sounds weird, but this earthy flavored hummus puts an interesting twist on traditional garbanzo bean and tahini hummus. 
To make the hummus roast 1 medium red beet until soft (450 degrees for 30 minutes). Add 1 can (15 ounces) white bean, 1 minced garlic clove, 1 pinch of salt and the juice of 1/2 lemon. Blend all the ingredients in a blender or food processor. Serve with baked vegetable chips or raw vegetables.
